Very Berry Cornbread Muffins


Ingredients:
1 cup corn meal
1 cup all-purpose flour
1/4 sugar
1 tablespoon baking powder
1 teaspoon salt
1 cup milk
1/3 vegetable oil
1 egg 
1/4 cup thinly sliced strawberries
1/4 cup blackberries (frozen or fresh)

Preheat your oven to 400F.

Whisk together in a large bowl the milk, vegetable oil, and egg.


In a smaller bowl mix the corn meal, flour, sugar, baking powder, and salt.



Pour the dry ingredient mixture in with the wet ingredient mixture and stir until combined.  




Add sliced strawberries and blackberries.


Spoon them into their cupcake liners so that they are about 3/4 full.


Pop them in the oven for about 25 minutes (check to see that they are done by sticking a toothpick in the center of one of the cupcakes and if it comes out dry, they are done).
